Barbara's Kitchen Peach Salsa Fish Tacos Recipe


  • 4 Grouper or Mahi Mahi Fillets

  • 2 tbsp olive oil

  • salt and pepper (To taste)

  • 1/2 cup of Red Onion sliced

  • 1/2 cup of Red and Green Bell Peppers chopped

  • 2 cups spinach or mixed greens

  • 2 cups Barbara's Kitchen Peach Salsa

  • 12 corn tortillas

  • diced avocado (To serve) (Optional)


  1. Preheat a skillet over medium heat. Add oil.

  2. Season filets with a sprinkle of salt and pepper on both sides.

  3. Once the oil is warm, saute the onion and bell peppers for about 1 to 2 minutes until softened, add two of the filets and cook about 4 minutes on each side, until fish flakes easily with a fork. Repeat with the remaining fish.

  4. Heat up your tortillas. Add spinach or mixed greens, top with fish (about 1 filet for 3 tacos), add the saute onions and peppers. Then spoon Barbara's Kitchen peach salsa over the fish. If you are using diced avocado or guacamole, add it over the salsa.

  5. Serve immediately.
